Alex Puchner, the SVP of brewing operations at BJ’s Restaurant & Brewhouse, argues that nearly by definition, gentle beers are “fermented to the point of very low residual sugar. They have a dry profile and relatively thin body.”

Selecting the improper yeast and attempting to “force” a gentle beer creates off flavors, says Wilson.

“If you get a stressed yeast, you’ll get Band-Aid and other off notes,” he says.

“Because beer is mostly water, the mineral profile has a huge impact on how a light beer tastes and feels,” says Campion. “We use a reverse osmosis system to strip our source water down to a blank slate, then build the exact profile we need for each style. Minerals like calcium chloride improve mouthfeel and give the beer a fuller, rounder body. Sulfates sharpen and accentuate the hop bitterness, making the beer taste crisper.”

By adjusting the sulfate to chloride ratio, a beer that feels substantial and satisfying even at a decrease calorie depend could be engineered.
